Prepping meals is so important. It's equally important to make sure that all your ingredients are fresh and wholesome. Tonight I made vegetable pasta with tomatoes, butternut squash, and avocado pesto.
First up: the butternut squash! Cube into small pieces (so they cook quickly) and place on a pan in a 400 degree oven with olive oil, salt, and pepper. Cook until tender and slightly browned.
Next come the tomatoes! These are a multi-colored bunch of cherry tomatoes that I halved/quartered (depending on the size of the tomato).
Last, stir fry the noodles (zucchini, yellow squash, and carrots -- pre-spiraled from Whole Foods) in a pan with olive oil and then let steam until tender. Plus, it's time to make the avocado pesto. In a food processor combine fresh basil, avocado, garlic, salt, pepper, and olive oil (damndelicious.net/2014/06/20/avocado-pasta/). Mix it all together and you have the most flavorful healthy pasta ever!
