I DID IT!!! I finally made a green smoothie that doesn't taste like grass! Today I blended orange juice, frozen bananas, chopped carrot, and a handful of kale and ice. It was filled with fruits and veggies, but also tasted like a summer treat! Delicious!

As some of you may know, the Jamba Juice in Dundee closed a while ago. Thus, we have developed a berry compote similar to that of Jamba's amazing oatmeal. Ours is pretty darn good, and I can put the recipe up later. Plus, the key is STEEL CUT OATS. No other oats are as yummy. Period. So I guess we don't need you anymore Jamba Juice... Except that we do. :-(
Sweet potatoes make nutritious, fast, and easy meals that can be different every time you eat them! Tonight I decided to take a Mediterranean route. On this beautiful potato (which I poked and microwaved for 5-6 minutes) I put a bunch of yummy toppings! This one included: roasted pine nut hummus, feta cheese, halved cherry tomatoes, pine nuts, green onion, thyme, rosemary, basil, and salt/pepper. The feta becomes gooey on the warm potato and the garden herbs give it extra flavor. It's a wonderful meal that is as easy as can be! Use any handful of ingredients in your fridge to make your potato masterpiece!
Veggies are an easy side to any meal! Keep your fridge stocked with a variety, such as carrots, sugar snap peas, bell peppers, and cucumbers, to add a crunchy compliment to any meal in minutes!
Peanut Sauce Recipe:
-5 tablespoons natural crunchy peanut butter -3 tablespoons warm water -2 1/2 tablespoons rice vinegar -1 1/2 tablespoons soy sauce -3 teaspoons white granulated sugar -handful of chopped green onions -honey to taste (you can add or take away ingredients depending on your own personal preferences) These waffles are truly addicting! Chia seed waffles topped with natural PB, honey, and chocolate chips. The usual. ;-)
