Pasta salad is a quick dish that can contain a huge variety of mix-ins. First I cooked brown rice/quinoa pasta (get yours at Trader Joes!) and chopped tomatoes, onion, red bell pepper, cucumbers, broccoli, and some fresh mozzarella. Mix in a red wine vinegar dressing and garnish with a sprinkle of feta and smooth avocado for the perfect lunch.

When you have bushels and bushels of ripe bananas, there are a few things you can do:
1. Suck it up and eat a mushy banana (not my favorite choice). 2. Cut and freeze them later for smoothies and more. 3. MAKE BANANA BREAD!!! As you can probably tell, I chose option 3 and made homemade banana bread to use up a good amount of my ripe bananas and then froze the rest for later. I found this recipe on an awesome page called Finding Vegan where they post tons of all vegan recipes! This one uses substitutes such as almond milk, chia seeds for eggs, and cacao nibs that are dairy free! The best part is that you don't miss any of the other ingredients because it's that good! Whether you're vegan or not, everybody will love this treat! (Note: My version is not gluten free -- I used whole wheat flour) I always have my eye out for new treats at Whole Foods, and this time I found a winner! This Chevre breakfast cheese is amazing! It's fresh goat cheese with a little bit of honey and goes perfectly on Mack's Flax toast. Yum!
I discovered the best new brand of bread EVER! It's from Whole Foods and is called Mack's Flax. Filled with seeds and whole grains, it makes the perfect hearty breakfast toast. Whether you top it with avocado, peanut butter, or Nutella, it's delicious!
Today I got to try a smoothie from the coffee bar at my favorite place -- Whole Foods! This was one with hemp milk, various seeds, fruits, and veggies. It paired perfectly with our lunch from the fresh bar, mine being a Greek salad with peppers, onions, and big chunks of feta cheese! A great way to enjoy a hot summer day!
I love dinners that are quick, but still taste good! This salmon bowl is the perfect fix to power me up for a weekend of volleyball. I reheated some leftover quinoa I had in the fridge, halved a few cherry tomatoes, and steamed some broccoli. My mom was amazing as always and grilled me a piece of salmon and I finished the whole thing off with some fresh avocado! This meal is the perfect balance of protein, grains, healthy fats, and bright veggies!
