This bowl is an awesome mix of fruit and super foods! The base is a blend of frozen bananas, mangoes, pineapple, and nectarines with a green super food packet (pineapple flavor from Whole Foods). The toppings include toasted pecans made in the toaster oven, fresh blueberries, raw pepitas, raw coconut shreds, and chia seeds.
Okay, this meal was AWESOME! I used a mix of cauliflower rice and added in some soy sauce to create a rice even better than your original sticky version. I then pan fried tofu in coconut oil, and stir fried a ton of veggies! It was a perfect mix of Asian flavors and packed with so many vegetables! Cilantro finished it off and added a fresh bite. I will be making this rainbow dish again soon!
At Whole Foods I discovered another super easy meal! They make it for you, and all I had to do was buy it and put it in a bowl! This is couscous salad filled with zucchini, yellow squash, carrots, parsley, celery, and a tangy dressing. Plus, it's cherry season! This makes for the perfect sun-bathing sumemr lunch.
Prepping meals is so important. It's equally important to make sure that all your ingredients are fresh and wholesome. Tonight I made vegetable pasta with tomatoes, butternut squash, and avocado pesto. First up: the butternut squash! Cube into small pieces (so they cook quickly) and place on a pan in a 400 degree oven with olive oil, salt, and pepper. Cook until tender and slightly browned. Next come the tomatoes! These are a multi-colored bunch of cherry tomatoes that I halved/quartered (depending on the size of the tomato). Last, stir fry the noodles (zucchini, yellow squash, and carrots -- pre-spiraled from Whole Foods) in a pan with olive oil and then let steam until tender. Plus, it's time to make the avocado pesto. In a food processor combine fresh basil, avocado, garlic, salt, pepper, and olive oil (damndelicious.net/2014/06/20/avocado-pasta/). Mix it all together and you have the most flavorful healthy pasta ever!
I LOVE mixing up any ingredients I have to make a new and fresh scramble. This one contains zucchini, cherry tomatoes, onion, potatoes, goat cheese, microgreens, and, of course, eggs! On the side I mashed some avocado with cumin/salt/pepper and heated up black beans. When you mix it all together, the textures are wonderful and the flavors are out of this world!
