One of my last meals of 2015 was definitely a great one! Laishley's is a great crab house in Punta Gorda that is right on the water and right on top of an adorable ice cream shop. Their sushi is beautiful and delicious, and you can't beat the view!
My breakfast this morning was super simple and hit the spot. I just microwaved some Quaker instant oats and topped it with pecans, walnuts, raisins, brown sugar, bananas, and various seeds (flax, pumpkin, and sunflower). With a glass of almond milk, it's the best way to start the day!
Okay so every other year my family and I take a trip to visit my grandparents at their house in Florida for the two weeks of Christmas break. It's a ton of fun -- we hang by the pool, go boating, and eat great food! Usually we prefer to fly down, but since I'm a junior now, the college search had to start somewhere! So, we took three days on the way down to stop at over ten different colleges and continued to go to more once we got down to Florida. It's been a blast and of the ones I've seen, here are my favorites::
1. Appalachian State: An awesome campus build into a mountain and an adorable downtown close by with vegetarian and vegan restaurants. The only drawback: no sand volleyball (at least not yet...). 2. Eckerd College: I beautiful campus right on the water with gorgeous sand courts and fun water activities. Drawback: division two for sports. 3. Florida Gulf Coast: Great nature trails, Food Forest, and a lake to do activities in. Drawbacks: A lot of parking garages and not near the ocean. 4. College of Charleston: Right in the middle of downtown Charleston with gorgeous historic homes and great restaurants. Drawback: I'd spend too much money! The other schools I visited were Purdue (unofficially passed through for lunch), Carson-Newman, Wake Forest, High Point, Elon, Duke, University of North Carolina Wilmington, Coastal Carolina, and we still have to visit Stetson! What a trip! And for those of you who don't know, I think I want to go to a fairly small school, hopefully play indoor and sand volleyball, go somewhere with a feeling much different then the suburbs of Illinois, and most likely study business or entrepreneurial studies (if they have that specific major). I know this really has nothing to do with food, but I do hope to go to a place with a cute town and tons of fun vegetarian-friendly restaurants. But until now, the search will continue...
Eckerd was even better the second time ... when we actually got to see the campus! Needless to say, I loved the beach vibe and sand volleyball courts. What's not to like?!
